Food For Thought: Veggie Roast Strips With Baby Bok Choy

The dishes that I post here on my "Food For Thought" page are from my book. I will include a food's nutritional value, origins, vibrational energy (when available) and recipes that generally take under 2 hours to prepare.   The exception to the cooking time will be adjusted when using a slow cooker.  Since the late 1970's it has become very popular to plan meals around a fast-food life-style. This has lead to unhealthy consumption and food related dis-eases.  I am so thankful to have learned from the older women in my family how to take time to prep foods and watch the colors come to life as each step involves an energy of patience and care that is transmitted to those who partake of it's goodness.  All foods are created soy-free vegetarian and sometimes vegan. Take a new look at food as art and therapy when it comes from a loving heart.

VEGGIE ROAST STRIPS WITH BABY BOK CHOY

BOK CHOY & VEGGIE ROAST STRIPS

BABY BOK CHOY

INGREDIENTS

  • 5 baby bok choy, separated leaves from stalk
  • 1 cup veggie roast (soy-free), sliced & seasoned
  • 1/4 cup virgin olive oil
  • 1/4 cup virgin olive oil
  • 1/4 cup onions, chopped
  • 2 cloves garlic, chopped
  • 1 whole large tomato, sliced
  • 1  tsp sea salt
  • 1/4 tsp lemon pepper
  • 2 tsp curry powder
  • 1 tsp honey
  • 1 tsp dried basil herb
  • 1/4 tsp blackstrap molasses

RECIPE

Season veggie roast slices with lemon pepper, salt, curry powder, honey, basil & molasses.  Let marinate in the refrigerator for about 30 minutes (or overnight).  Put olive oil in a skillet.  Saute onions for about 2 minutes turning frequently until translucent. Remove from oil and set aside. Add garlic & tomatoes and veggie meat to the oil, saute for 2 minutes stirring frequently, then remove from skillet and set aside.  Add another 1/4 cup oil and return the onions to the skillet, adding bok choy leaves stirring frequently for about 3 minutes.  Remove from heat and mix all ingredients together in the skillet.  Serve over brown rice.   Makes 2 servings

I first learned about Bok Choy from my Mama-San (step-mother).  During my teen years she taught me how to cook with it in her Philippine cuisine dishes. We often chopped it up and used it in place of regular cabbage in pansit, a popular noodle dish.  We also ate bok choy in a fermented Korean dish known as kimchi alongside rice.

Bok Choy is of Chinese origin, it's a Chinese cabbage. Its in the same brassica chinesis family as collard greens, cabbage, brocolli, Brussels Sprouts, kale & swiss chard. These foods are reported to have cancer prevention properties.  I use the whole bok choy plant from the beautiful deep green crinkly leaves to it's tasty flavorful celery-type stalk.  Bok Choy is high in Vitamin A & C and also rich in calcium.  Most beneficial to those who are under the vibrations of: 2, 6, and 7

Use bok choy in small doses.  Large doses of poorly cooked bok choy is considered to be toxic causing nausea, dizziness, & digestive problems.

Basil: is very aromatic. Sometimes referred to as St. John's Wort. Scientific studies have proven that it has components that are antioxidant, antiviral and antimicrobial.
