SOUP RECIPE

OREGANO-CILANTRO ORANGE LENTIL SOUP

2 lbs. whole      orange (red) lentils

6 whole            okra sliced

1 fresh medium jalapeno pepper, chopped

2 bunches         fresh cilantro leaves

1 bunch            fresh oregano leaves

1 large sweet    onion, chopped

1 cup                ginger, diced small

1/2cup              turmeric, diced small

1 large sweet    red bell pepper, chopped

1 tsp                 black pepper, ground

2 Tbsp              Himalayan pink salt

1-2 small bunches spinach

When possible use all fresh herbs and vegetables instead of the powdered herbs.  Rinse and clean lentils.  Place lentils in a large pot with okra and jalapeno pepper.  Add 1/2 gallon of water and bring to a boil. Turn down to a simmer and add cilantro, oregano, onion, ginger, turmeric, red bell pepper.  Continue simmering until the broth thickens, approximately 30-45 minutes.  Once okra has disintegrated add the spinach then remove from heat.  Spinach requires no cooking time.
