RECIPE

Dill Ginger-Dill Lentil Soup By L'dia Men-Na'a With garlic "Jimmy" bread Spinach, cucumber salad with avocado dressing

RECIPE GINGER-DILL LENTIL SOUP

  • 2Lbs orange lentils
  • 1/2 gallon water
  • 1 cp cut okra
  • 1 white onion, chopped
  • 1/2 cp ginger, chopped
  • 1 red jalapeno pepper
  • 1 bunch dill
  • 5 stalks celery
  • 7 small sweet orange bell pepper
  • 2 Tbsp Himalayan pink salt.

Wash and rinse lentils. Place lentils in a large pot cover with 1/2 gallon water. Bring to a boil. Add remaining ingredients except sweet bell peppers and salt.

Cover and simmer for approxomately an 60-90 minutes, till okra is no longer visible, the soup has thickened, and the ginger is soft.

Finally add sweet bell peppers and salt. Simmer 10 more minutes.

Serve with salad and toast Makes approx 6+ cups of soup. Tip: Freeze the extra servings
